Simple Lentil Baby Stew-Protein Recipe
Meatless Monday can be a great way to start eating less meat without feeling like you have to change your whole lifestyle or diet “cold-turkey” as they say. Meatless Monday simply means that on Mondays you cook meals without using any meat.
If that sounds challenging for you, look no further than lentils. Lentils are heavy, hearty, a great vehicle for spices and really good for you. Take your favorite spice combo and throw it into a pot of lentils. After the lentils cook down, you’ll swear you’re eating a meat based stew! Too far? Ok, well at the very least you’ll think it’s tasty and filling. Here’s a great recipe that the whole family can enjoy:
Simple Lentil Baby Stew (6+ months)
Ingredients
- 1/4 cup lentils (red, green, or brown)
- 3/4 cup water or low-sodium stock (vegetable, beef, or chicken)
Instructions
- Sort lentils, removing any discolored/damaged ones. Then, rinse lentils.
- Bring water or stock to a boil. Add lentils.
- Cook until tender (15 minutes for red lentils, 20 minutes for green lentils, or 30 minutes for brown lentils).
Notes:
Brown lentils are typically the easiest to find in the grocery store. However, red and green are also good choices. Red in particular are great for babies — they’re naturally sweet, and they cook fast.
